Here is your permission to eat ice cream for breakfast! This recipe is simple, delicious, and nutritious. Seriously, eat it for breakfast or enjoy as a healthy dessert.
Yields: 1 bowl
Equipment:
- Small Blender
Ingredients:
- - 2 ripe bananas – peeled, sliced and frozen
- - 2 tbsp creamy peanut butter
- - 1/4 cup coconut milk (can substitute for almond milk or other nondairy milk)

Optional Toppings:
Want to take this simple breakfast to the next level? After blending, top with the following to your liking:
- - Granola
- - Dark chocolate chips/shavings
- - Freshly sliced banana
- - Freshly sliced strawberries or blueberries

Instructions:
- - Add all ingredients to the blender.
- - Blend until smooth and creamy or to desired consistency. For a thicker consistency, use less liquid.
- - Transfer to a bowl and garnish with desired toppings or enjoy as is.
